Olithea is a premium, high-phenolic extra virgin olive oil from Corfu, Greece, made from native Lianolia olives grown in family-owned groves at Agios Mattheos. Analysis at the University of Athens shows 947 mg/kg total polyphenols, including 399 mg/kg oleocanthal and 339 mg/kg oleacein. Cold extracted within four hours of harvest and supplied in a 500ml bottle.

Taste
Medium bitterness, medium spiciness and a complex fruity aroma. The peppery finish comes from the oil's natural phenolic compounds.
Polyphenols and health
Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress. The beneficial effect is obtained with a daily intake of 5 mg of hydroxytyrosol and its derivatives (e.g. oleuropein complex and tyrosol) in olive oil. This oil is listed by the producer under EU Regulation 432/2012.
The grove
Olithea is produced at family-owned olive groves and a mill in Agios Mattheos, south-west Corfu, at an altitude of 130 metres. The trees are old Lianolia olives, and the oil is produced exclusively from the family's own fruit.
How to use
Best used raw: drizzle over salads, vegetables, fish, bread and soups, or take a spoonful. Store in a cool, dark place with the cap closed.
